Chocolate Mousse Pie

An easy to make chocolate treat.
For Crust:
2 Cups dry almonds
1/2 Cup dates
For Pie Filling:
½ cup medjool dates, soaked
½ cup maple syrup or coconut nectar
1 teaspoon vanilla extract, optional
1-1/2 cups mashed avocado (3 avocados)
¾ cup organic cocoa or carob powder
½ cup water
Preparation:
In a food processor: process the dry cashews and dates until crumbly. Press down into a pie pan, and set aside.
Next, combine all of the filling ingredients in the food processor and blend till smooth. Pour filling contents into the pie pan, and place in refrigerator until set.
